Ingredients

    vegetable oil
  • 1
    small onion, sliced into ½ inch pieces, 2 inches long
  • 1
    small red bell pepper, sliced into ½ inch pieces, 2 inches long
  • Salt and pepper, to taste

    sheet frozen puff pastry, thawed
  • 4
    pre-cooked Italian sausages
  • 1
    egg, beaten
  • 1 tsp
    Italian seasoning
  • Flaky salt, for garnish
  • Marinara sauce, for dipping

Directions

Step 1
Prepare the Onion and Pepper Filling

1 tablespoon vegetable oil, 1 small onion (sliced into ½ inch pieces, 2 inches long), 1 small red bell pepper (sliced into ½ inch pieces, 2 inches long), salt and pepper (to taste)

Preheat the oven to 400°F.
Heat a large skillet over medium heat and add the vegetable oil.
Toss in the sliced onion and red bell pepper, season with salt and pepper, and sauté for 5-7 minutes, or until softened.
Remove from heat and set aside to cool.
Step 2
Prepare the Puff Pastry and Sausages

4 pre-cooked Italian sausages, 1 sheet frozen puff pastry (thawed), flour (for rolling out), 1 egg (beaten)

Line a sheet tray with parchment paper.
Cut each Italian sausage into 3 equal-sized pieces, resulting in 12 pieces total.
Flour a clean work surface and roll out the puff pastry into a rectangle approximately 12 inches wide.
Cut the puff pastry into 12 equal rectangles, large enough to wrap around each piece of sausage.
Step 3
Assemble the Pigs in a Blanket

Sautéed onion and pepper mixture, 1 teaspoon Italian seasoning, flaky salt

Place a sausage piece in the center of each puff pastry rectangle.
Top the sausage with a small amount of the onion and pepper mixture.
Wrap the puff pastry securely around the sausage and filling, pinching to seal the edges.
Brush the tops with the beaten egg.
Sprinkle with Italian seasoning and flaky salt.
Place the assembled bundles on the prepared sheet tray, seam side down. Repeat with the remaining sausages and puff pastry.
Step 4
Bake and Serve

Marinara sauce (for dipping)

Bake in the preheated oven for 24 minutes, or until the puff pastry is golden brown and the sausages are warmed through.
Transfer the pigs in a blanket to a serving platter and serve warm with marinara sauce for dipping.
